"This collaborative brew, between me and Sam Luntley, began on St. Patrick's Day in 2024 when Sam used a plum porter I brewed in a delicious celebratory Irish soda bread. Sam and his partner's (Anna Luntley) baking has continued to inspire my brews ever since. We share similar values of creativity, kindness, dedication to quality of product & attention to detail. It has been a great pleasure to work together and learn from likeminded folk. It's been insightful and educational, not least in appreciating the cross-over of the worlds of bread and beer making. Early this year we began work on a recipe using Sam's sourdough starter and Scotland The Bread's Balcaskie wheat, the predominant grain used by Sam in his sourdough bread. We liked the idea of a raw (no boil) Berliner Weisse soured exclusively by the starter Sam has nurtured and baked with for over a decade. The wild sourdough ferment is full of fruity esters: a fascinating and unique culture which soured the wort brilliantly. The beer was then co-fermented with several farmhouse yeast strains and subtly dry-hopped with Olicana, a British hop with peachy aromas and tropical fruit characteristics. The beer was then conditioned long and slow for a full expression, perfect for summer sipping. The result is a tart, but not too sour, modern Scottish Berliner Weisse with stone fruit aromas that lean into a citrus palate of lilting fruitiness, and leads to a dry refreshing finish"
